Hey Jacque; Nice Fish! There up here but are few and far between. You find them outside five miles or more and like to hide under kelp paddys. Usually a male and female are together. Mahi-Mahi is the name for them in Hawaii but in Mexico they are called Dorado---Tight lines Tom
The fish is called Dorade or Mahi-Mahi or also Dolphin (the fish) depending in what part of the world we are in. When we catch a fish like this one, to prevent having a fight and blood all over the cockpit (not only the fish…) we usually pour a couple of ounces of 150% proof farmers Rum in the gills.
If we intend in making Sushi, (mostly Tuna) there is a very elaborate technique for getting all the blood out so has to have perfect color (and taste) for the meat. (For more details on this, you will have to ask Lisa.
